summer salad

 Summer Salad


Ingredientes

Edamame (or black bean etc)

corn

tomatos (or cherry tomato)

cucumber


1/2 cup or less EVOO 

1 TB spoon or less Salt

1 teaspoon or less Black pepper

1 lemon (both juice and peel) 


1) defrost the frozen veggies (edamame and corn) 


2) cut veggies (tomato and cucumber) 


3) Peel lemon and get juice, too. 

4) mix all the ingredients with seasoning etc. (Please do customize = improvize as you like) 

seasoning--> start less (you can always add more) 


5) put it in the fridge to keep cold until you eat.

other ideas

To add more freshness, cut Italian Parsely or Cilantro, or even Basil. 
I do not like cheese, but you can add (right before you eat) mozzarella cut-ups. 

other viggie ideas --> onions, celery, kale, shredded carrots, raddish, jicama, etc. 

If you want to make this salad as a meal, add grilled chicken (salmon)  on top.
