My kofta (middle eastern meat balls) and taziki sauce

Kofta meat

10 cloves garlic
1 onion
1 bunch parsley
2 Table spoons coriander
1 Table spoon cumin
1 Table spoon cinnamon
1 tsp all spice
1 tsp chili pepper
1 tsp ground ginger
1 tsp ground black pepper
Add salt as you like (upto 2 table spoon)
I add salt very little and later when we eat, we sprinkle cosher salt on top

Blend all above
, and mix with 1 pound ground lamb
And 1 pound of ground beef

Taziki sauce ( cucumber/ yogurt sauce)

2Combine the strained and chopped cucumber(1 English cucumber)  with 2 cups plain greek yogurt, 1 1/2 Tbsp lemon juice, 4 pressed garlic cloves, 1/3 cup chopped dill, 1/2 tsp salt (add more to taste) and 1/8 tsp black pepper. If you like add chives 

I do not add salt until I eat right before (to prevent becoming soggy

🍷my original "chicken ceviche"


Cooked chicken and shredded 
Celery cut ups
One onion thin sliced
Salt pepper 
Olive oil
Lemon 

Variations can be...
Add tomato, basil, or cilantro, feta cheese etc. 

Great summer dish 

🥂🍷garlic shrimp

I learned this recipe in Madrid in 2008.
Simple, but great one tapa dish.

3-4 dientes de ajo (garlic)
20 o más camarones (shrimp)
Aceite de oliva (olive oil)
Sal y pimienta (salt n pepper)
Salsa picante si quieres (if you want, hot sauce)
Limón (lemon )

Don't over cook!
Shrimp will be too hard .



🍷Brussels sprout / bacon


Just cut in half the Brussel sprouts, and place them in the pan
On top of the each sprouts, put the raw bacon

Cook 350 F until bacon and sprouts are cooked.

Easy appetizer

🍷zucchini patties


2 cups of grated zucchini
2 beaten eggs
1/2 cup chopped onion
1/2 cup flour
1/2 cup Parmesan cheese
1/2 cup shredded mozzarella cheese
Some salt ( I do not use salt)
2 table spoons of oil 

Serve with tomato sauce or sour cream 

Rum cake

1 cup of chopped walnuts

1 box of yellow cake mix
1 small box of vanilla pudding
4 eggs
1/2 cup of water (or oj)
1/2 cup of veggie oil
1/2 cup of rum

325 F for one hour

10 minutes cooling the cake, then pour slowly the rum syrup

1/2 cup butter
1/4 cup water
1 cup (or less) sugar
1/2 cup dark rum
