My Little Cookies (San Diego based) recipe

 


2 stick of room temp butter


1 cup sugar

1 egg


1 TSP vanillla extract

1 TSP Almond extract

1/2 TSP salt

1 TSP BP

3 cups all purpose Flour 

beat a lot until dough forms a ball 


rest at least one hour in the fridge

Bread n Butter pickles

Clark and I went to the farmer's market.

a whole bunch of small cucumbers was only $5.


INGREDIENTS

  • 2 1/2 lbs pickling cucumbers (fresh from the market)
  • 1 pound white or yellow onions, thinly sliced
  • 1/4 cup pickling salt (can use Kosher salt as a substitute, regular table salt has additives in it that will turn the pickles dark and muddy the color of the pickle juice)
  • 2 cups apple cider vinegar 
  • 1 1/2 cup brown sugar
  • 1 Tbsp mustard seeds (i did not have one today, so All Spice and powder mustard....see what happens)
  • 3/4 teaspoon celery seeds (I did not have one today.... I cut up celery stalk leaves) 
  • 1 inch cinnamon stick (I did not have one today,,,,, cinnamon powder) 
  • 1teaspoon turmeric

1 Prep the cucumbers: Carefully rinse the cucumbers, scrubbing away any dirt that may have stuck to the ribs. Slice off 1/8-inch from the ends and discard. Slice the cucumbers in 1/4-inch thick slices, place in a large bowl




2 Toss sliced cucumbers and onions with salt, cover with ice, and chill 4 hours. Then rinse and drain:
Add the sliced onions and pickling salt. Stir in so that the salt is well distributed among the cucumber slices. Cover with a clean tea towel (thin towel, not terry cloth). 




3 Sterilize the jars: If you are planning to store your pickles outside of the refrigerator for any length of time, you will need to sterilize your jars before canning, and heat the filled jars in a hot water bath after canning.
If you are planning to eat the pickles right away and store them the whole time in the refrigerator, you can skip the water bath step. It's still a good idea to sterilize the jars first, you can do that by running them through the dishwasher, or placing them in a 200°F oven for 10 minutes.
To sterilize the jars for canning, place empty jars on a metal rack in a large, 16-qt canning pot. (Jars must rest on a rack in the pot, not on the bottom of the pot). Fill with warm water and bring to a boil. Reduce heat to warm to keep the jars hot and ready for canning.
Remove with tongs or jar lifters one by one as you can the cucumbers.
Sterilize the lids by bringing a pot of water to a boil and pouring water over a bowl containing the lids.
4 Boil vinegar, sugar, pickling spices: In a 4 qt or 6 qt pot, place the vinegar, sugar, and all of the spices. Bring to a boil. Once the sugar has dissolved, add the sliced cucumbers and onions. Bring to a boil again. As soon as the sugar vinegar solution begins boiling again, use a slotted spoon to start packing the hot jars with the cucumbers.


5 Pack jars with cucumbers and onions, pour pickling syrup over them: First pack a jar to an inch from the rim with the vegetables. Then pour hot vinegar sugar syrup over the vegetables to a half inch from the rim.
Wipe the rim clean with a paper towel. Place a sterilized lid on the jar. Secure with a metal screw band.



6 Process in hot water bath: If you are planning to store pickles outside of refrigerator, process the filled jars in a hot water bath for at least 15 minutes. Return filled jars to the same canning pot with its already hot water. Water level needs to be at least one inch above the top of the cans.
Bring to a boil and let boil hard for 15 minutes, or 20 minutes for altitudes of 1001 to 6,000 feet. Over 6,000 feet, boil for 25 minutes. Remove jars from pot.
Let cool down to room temperature. Jars should make a popping sound as their lids seal. If a lid doesn't properly seal, do not store the jar outside of the refrigerator.

Snikerdoodles (Ann Egnor. or maybe Maxie Deitz Egnor)

Snikerdoodles (Ann Egnor. or maybe Maxie Deitz Egnor) 



Mix thoroughly 
1 cup soft shorteing (can just Cresco) (part butter)
1 1/2 cups sugar
2 eggs

Sift toghter and stir in
2 3/4 cups sifted flour
2 teaspoon. Cream of tartar
1 teaspoon soda (baking soda)
1/4 teaspoon salt

Roll into balls the size of small walnuts
Roll in mixture of
2 Tablespoon sugar
2 teaspoom cinammon

Place 2 inch apart on ungreased baking sheet
Bake until lightly browned... but still soft.
(These cookies puff up at first... then flatten out) 

Temperature:  400 F (200 C) (mod. hot oven)
Time:  Bake 8 - 10 minutes
Amount: about 5 doz. 2-inch cookies




Alabama Pican Pie (Ann Egnor says from her aunt Harriett)

Alabama Pecan Pie

Aunt Harriett is some great auntie that I have never met.
Nanny Marshall (Francis Marshall)'s younger sister.


1 cup sylup (light)
1 Tablesopoon Butter
1 tsp salt
2/8 tsp cinammon
3 eggs
1/2 cup sugar
1 tsp vanilla
1 Tablesoppn grated orange peel
1 cup chopped pecans

Put all together
Mix well with beater
uncooked pie shell
bake slowly about 1 hour at 300 F degree
Can serve wtih whipcream

Ann's  Oatmeal Cookies


3 cups oats
2 cups flour
1 cup white sugar
1 cup brown sugar
1 tsp baking soda
1 cup vegitable oil
2 eggs
1 1/2 teaspoon Vanilla
peanut butter chips


325F for 12 min.

Mexican Wedding Cakes = polvorones

Polvorones

ingredients

  • 2 sticks of butter 
  • 1 cup of chopped nuts (walnuts, or pecan, chia seeds etc )(optional) (one cup of chia seeds will be too much. Adjust yourself) 
  • 1/2 cup (or less) of granulated sugar
  •  2 cups of flour
  • lemon peel (optional) 
  • Pinch of baking powder 
  • some (about 1 cup ) of power sugar (we asians like as it is, without extra sugar). 

Preparation
  • preheat oven 330 F. 
  • melt butter in microwave
  • add nuts and sugar into melted butter, mix well
  • add flour and lemon peel, mix well
  • form into small balls, and place them on baking sheet (if difficult to handle, keep the dough in the fridge for a while) 
  • bake 330 F for 30 minutes or until cookies are done
  • wait a little but to cool cookies
  • roll these cookies into powdered sugar.
