Greek Spinach turn over

 

Dough (mix all- do not over mix) 

1 cup olive oil

1 cup greek yogurt

1 TB or less lemon juice

1 tea spoon sugar

1 tea spoon salt 

4 cups of flour 

after mixing it rest for at least 30 min. 



Spinich filling 

1 pound of baby spinich roughly choppedd

5-6 green part of green onion chopped, 

ricota cheese 15 OZ

3 eggs

one pound of feta cheese 

3 teaspoons of dry dill 


olive oil, salt,  pepper, garlic powder to taste--> control salt, depending upon Feta cheese. 

an egg for egg wash 

I substituted Expensive Feta cheese with Mexican chesse (Cotija and Panela)  Use less watery cheese if you want to substitute.... Mozzarella has too much water content.  Think Feta. Cotija was excellent. 




Devide the dough about 16.  Roll, and about 1 and 1/2 table spoon of spinich filling, and shape for the turn over, 

decorate the edge with fork 

cut the air pocket and egg wash 

400 F (200 C) for about 30 -35 minutes) 
Cool before eating
(I probably should have make the dough thicker, so that they do not break while baking) 




I think this recipe called for Either 1) double the dough amount, 
or 2) 1/2 for spinich.    

For this time, I made extra  pie by using left over pie dough (for apple pie in the freezer.)
And Froze this for another occasion.
